- Lemon Sevai: Dip sevai in boiling water for 3–5 minutes and drain. Mix with a seasoning of mustard seeds, curry leaves, green chilies, turmeric, and lemon juice.
- Coconut Sevai: Boil and drain the rice sevai. Toss with a seasoning of mustard seeds, urad dal, curry leaves, and coconut gratings.
